【Abstract】 Single and complex enzymes were used to extract collagen and its polypeptides with different ranges of molecular weights from hide offal. The functional properties of the extracted collagen products were determined. It is found that collagen and its polypeptides with different molecular weights differ in their dissolubility in water, water absorption, wetlability,oil adsorption, gel forming, emulsification, foam forming and foam keeping.更多还原
