【摘要】 对保证食品安全的预防性技术管理体系HACCP作了介绍 ,并对果蔬汁产品的关键点作了说明。

【Abstract】 HACCP (Hazard Analysis and Critical Control Point), a preventive technological control system for the guarantee of food safety, is described, and the critical points for fruit and vegetable juice products introduced.
