【摘要】 以海藻酸钠、大豆分离蛋白和鱼糜为主要原料 ,研制仿干贝制品 ,为产业化生产提供工艺参数 .

【Abstract】 This papecr deals with the bionic dried scallop products from the major raw materials of sodium alginate? soybean protein isolate and comminuted fish muscle. The technology parameters will be provided for the industrial production of this products.
