食品添加剂及金属离子对蓬蘽红色素稳定性的影响
The Influence of Food Additives and Metallic Ions on the Stability of Rubus hirsutus Thunb Red Pigment
【摘要】 就常用食品添加剂 (含甜味剂、酸味剂、 Vit C、苯甲酸钠 )和 7种金属离子 ( Cu2 + 、 Fe3 + 、 Mn2 + 、Al3 +、Zn2 +、Na+、Mg2 + )对蓬红色素稳定性的影响进行了分析探讨 .结果表明 :葡萄糖、蔗糖、柠檬酸、苯甲酸钠对蓬红色素有不同程度的护色 (增色 )效果 ,Vit C对色素有一定的降解作用 ,金属离子中的 Cu2 + 、Fe3 + 对蓬红色素有明显的破坏作用 ,其它离子如 Mn2 + 、 Al3 + 、 Zn2 + 、 Na+ 、 Mg2 + 等对蓬红色素无影响或影响甚微 .
【Abstract】 The influence of food additives, including glucose, sucrose, citric acid, VitC, sodium benzoate, and various metallic ions(Cu 2+ ,Fe 3+ ,Mn 2+ ,Al 3+ ,Zn 2+ ,Na +,Mg 2+ ) on the stability of R.hirsutus red pigment was investigated in this paper. The results show that preservative sodium benzoate, citric acid and some food additives such as glucose,sucrose had certain fortification effects on the tone of pigment. However, Vitamin C was shown to have a definite effect of degradation. It was found that Mn 2+ ,Al 3+ ,Zn 2+ ,Na +,Mg 2+ had little effect on the stability of R. hirsutus red pigment while Cu 2+ ,Fe 3+ had severe undesirable effects.
