毛细管气相色谱法分析鸡蛋中DHA、EPA和亚麻酸的含量

【摘要】 [目的 ] 分析鸡蛋中DHA、EPA和亚麻酸等几种重要的高级不饱和脂肪酸。 [方法 ] 采用毛细管气相色谱法 (APGC)定量分析了某保健鸡蛋中DHA、EPA和亚麻酸的含量 ,以普通市售鸡蛋作对照。 [结果 ] 发现某保健鸡蛋中含有DHA(0 .2 0 %~ 0 .2 5 % )、EPA(0 .0 2 3 %~ 0 .0 2 8% )和亚麻酸 (0 .6 6 %~ 0 .96 % ) ,普通鸡蛋中含DHA 0 .0 81%~ 0 .0 92 %、EPA 0 .0 0 3 %~ 0 .0 0 7% ,亚麻酸未检出 ,相对误差均小于 4%。 [结论 ] 本方法快速、简便 ,试样量少 ,分离效果好 ,准确度高 ,结果令人满意。

【Abstract】 Objective] To Analyze DHA, EPA and linolenic acid contents in eggs. [Methods] Unsaturated fatty acids were determined by APGC, and quantified with area normalization method.[Results] In some health eggs, those contents were as follows: DHA(0.20%~0.25%),EPA(0.023%~0.028%)and linolenic acid(0.66%~0.96%). However,ordinary eggs contained DHA 0.081%~0.092%,EPA 0.003%~0.007% and linolenic acid was undetected. The relative error were less than 4%. [Conclusion] The proposed method is rapid, and suitable for the determination of DHA, EPA, and other unsaturated fatty acids in samples.
