【摘要】 用Na₂S₂O₃—I₂滴定法测定了橙皮提取物在油脂中的抗氧化作用,结果表明,不同溶剂的提取物均表现出一定的抗氧化活性;以橙皮乙醇提取物为实验对象,测定其与数种增效剂在油脂中的协同抗氧化作用,和用Ce³⁺荧光分光光度法测定了其对Fenton反应产生的羟自由基·OH的清除率,结果表明橙皮乙醇提取物与抗坏血酸的协同抗氧化作用最好,对Fenton反应产生的·OH具有清除作用。更多还原

【Abstract】 Studied antioxidant action in grease of extract from orange peel by the Na2S2O3 - I2 titrimetric method. The results showed that all the extracts obtained by different solvents had antioxidative effect to some degree. Tested antioxidant ac-tion when extract by alcohol from orange peel worked cooperation with different synergists and and hydroxyl racial effect in Fenton system and compared the effect with that of ascorbic acid. The result showed that extract of orange peel worked best to-gether with ascorbic acid and extract can remove hydroxyl radical.更多还原
