【摘要】 本文报导大银鱼的主要营养成分与其它 11种淡水鱼类比较研究的结果。表明 12种淡水鱼类 ,粗蛋白含量相关不十分明显 ,以罗非鱼鱼肉蛋白质含量为最高 ( 18 9%～ 19 7% )。脂肪含量相差较大 ,就全鱼而言以大银鱼脂肪含量为最低 ( 0 99%～ 1 8% )。说明大银鱼是一种营养价值较高的优质鱼类 ,具有广泛的移植价值更多还原
