【摘要】 目的 :了解鸭蛋经人工注入鼠伤寒沙门氏菌加工成皮蛋后 ,不同时间该菌在皮蛋中的存活情况。方法 :将 0 .1亿、 0 .2亿两浓度的鼠伤寒沙门氏菌悬液注入鸭蛋 ,并加工成皮蛋 ,从加工之日的 2 0～ 30 0日不同时段取样检验。结果 :各时段从皮蛋中共分离出细菌 198株 ,与注入的鼠伤寒沙门氏菌标准菌株完全一致 ,其形态、生化、血清学、毒力等均不发生改变。结论 :鼠伤寒沙门氏菌在 p H8.2以上皮蛋特殊环境中能长期存活。更多还原

【Abstract】 Objective:In order to get to know the survival ability of the salmonella typhimuria at different time.Methods:Salmonella typhimuria(concentration 10 million and 20 million) were injected artifically into duck eggs while lime processed duck eggs(pidan) were made,then taking samples at different time from 20 th ～300 th after processing.Results:198 strains of bacteria which had been isolated from these duck eggs,were consistent with the strains of standarized salmonella typhimuria on the features of morphology biochemistry,serology and toxicity.Conclusion:Salmonella typhimuria can survive a long time in the special circumstances(pH value is over 8 2) of the lime processed duck eggs(pidan).更多还原
