养殖大黄鱼生化组份的分析
Biochemical compositions of farmed Pseudosciaena crocea
【摘要】 本文测定了厦门火烧屿养殖大黄鱼成、幼鱼肌肉中蛋白质、脂类和糖类等生化组份 ,并计算其比能值 ;分析了肌肉蛋白质中 1 7种常见氨基酸的含量。结果表明 :成鱼肌肉蛋白质占 1 8.9% (湿重比 ,下同 ) ,脂类为 3.1 1 % ,糖类为 1 .6 2 % ,水份占 75 .30 % ,灰份为 0 .95 %。比能值为 5 .98kJ/ g ,E/P值为 31 .6 2kJ/g。幼鱼肌肉中以上各项含量分别为 1 7.1 %、1 .6 1 %、1 .0 8%、79.0 6 %、1 .0 3%、4.87和 2 8.45kJ/ g;成、幼鱼肌肉蛋白质中 1 7种常见氨基酸含量丰富 ,分别为 1 5 3.5 9和 1 49.91 (×1 0 -3 m/m) ;必需氨基酸和半必需氨基酸含量较高 ,占总氨基酸的 5 1 .7% (成鱼 )和5 8.9% (幼鱼 )。
【Abstract】 The contents of biochemical composition in muscle of farmed Pseudosciaena crocea( Richardson) collected from Huoshao yu I. in Xiamen were measured in this paper. Also, the amino acids of this fish were analysed. The result showed:The contents of dissoluble protein,lipid,glycogen,ash and moisture in the tested adult fish muscle were 18.9%( wet weight, the same below), 3.11% ,1.62%,0.95%,75.3% respectively and 17.1%,1.61%,1.08%,1.03%, 79.06% in young P.crocea The ratios of energy and those of energy to protein content were 5.98kJ/g, 31.62 kJ/g in adult and 4.87kJ/g,31.62kJ/g in the young fish. There were at least 17 amino acids in muscle protein, with the total amount of 153.59(×10 -3 m/m) in adult and 149.91(×10 -3 m/m ) in young yellow large croaker. The ratios of essential and semi essential amino acids for the human beings to the total ones were 51.7% and 58.9% in adult and young fish respectively.
