【Abstract】 The paper described the potential titration method for determining free amino acids in food, the operation is fast and equipment is simple ,Determination of free amino acids by value of pH,variations of pH can be used to ditermine the terminal point of titration without indicator, the main advantage of method is improved resistance to interferece from the colour of solution as well as good sensitive ,the recovery of method is 95%.更多还原
