紫心甘薯红色素提取技术研究

【摘要】 通过最佳提取方法的研究，确定紫心甘薯红色素的最佳提取条件为：０．５％柠檬酸，６０℃恒温，１：２００物料比，提取１ｈ．在此条件下，采用二次提取工艺，可获得率为８５．１％

【Abstract】 The conditions for extracting pigments from sweet potato storage roots were studied in this paper. The optimum conditions have been obtained,which include extracting reagent 0.5% citric acid,temperature 60 ℃, extracting time 1 hour, rate of root powder to the reagent 1∶200, and extracting times 2. The extracting rate reaches 85.1%.
