四川白鹅羽绒品质及肉质的研究

STUDIES ON QUALITY OF MEAT DOWN AND FEATHER OF SICHUAN WHITE GOOSE

【摘要】 本试验对四川白鹅羽绒品质及肉质进行了初步研究,结果表明:四川白鹅羽绒占体重的5.43%,自然含水率15.03%,蓬松率270,透明率62.10%,脱脂绒羽冷却系数0.1263;四川白鹅全净堂屠宰率62.90%,熟肉率54.00%,系水力49.17%,肉色0.7681,左胸肌嫩度60.20N,腿肌嫩度35.71N,粗蛋白18.34%,粗脂肪2.10%。在我国现今鹅种资源中,四川白鹅的羽绒品质及肉质表现出良好性能。

【Abstract】 In the paper, one hundred Sichuan White Gooses with 90 - 120 day and 2. 5 - 4. 5kg from Rongchang, Yongchuan and Neijiang were used to study the quality of meat, down and feather. The results were as follows: for down and leather, it was 5. 43% body weight, natural moisture content 15. 03%, fluffiness 270, transparency 62. 10%, and cooling coefficient of defated down feather 0. 1263; for meat, dressing percentage 62. 90%, cooking percentage 54. 00% , holding water capacity 49.17% , meat color 0. 7681, tenderness of the left breast 60. 20N, tenderness of the left thigh 33. 71N, crude protein (CP) 18.34%, and crude fat (CF) 2.10%. Therefore, the quality of down,feather and meat of Sichuan White Goose is good among Chinese Goose germplasm resources.
