鸡蛋涂膜保鲜研究

【摘要】 鸡蛋涂膜后在室温下保存3个月,其干耗率为3%左右,仅相当于未涂膜组的1/9,品质良好,日常各种食用方法均可。涂膜保鲜材料来源方便,价格低廉,无毒无副作用,涂膜方法简便易行。涂膜1kg 蛋约需成本费0.03~0.04元.

【Abstract】 The fresh eggs coated with preservative liquid were stored for 3 monthes at room temperature,the egg weight lost about 3%,was equal to 1/9 controls The quality of coated eggs were assessed to be better than that of uncoated controls.The materials of preservative liquid are very cheap and they have no poisonous effects and any side effects.The cost ofcoating 1 kg egg is about 0.03-0.04 yan.
