Ultra-high pressure technology is one of the most popular methods in food process. This paper reviews the situation of ultra-high pressure in food industry, including the principle of ultra-high pressure, high pressure processing equipment, application, and the present problems. The prospect, the importance of UHP applied in food industry are also mentioned in this paper.
