The effect of cold shock treatment on softening of postharvcest 'Baxi' bananas was investigated. The results showed that the treatment of -2-0℃ cold air for 2.5h significantly delayed fruit softening. Cold shock treatment inhibited the activities of polygalacturonase and amylase, and delayed the degradations of pectin and starch which resulted in a delay in fruit softening and a maintainance of fruit firmness.
