The acidity, biomass, bile salt - tolerance and assimilating cholesterol rate of Lactobacillus acidophilus was studiesbased on the collection of six strain, an two fine strains have excellent trait. Their acidity, bile salt - tolerance, rate of assimilatingcholesterol was 209. 5°T, 0. 5%, 60% - 80% respectively. They can be used as microecological adjuncts starter.
