The gluten qualities some Chinese wheats and French wheats were comPared through analyzing the wet gluten content and gluten index of wheat whole meals and flours. The results showed that though the wet gluten contents of the French wheat samples and flours were lower (22. 6% -36. 1% ), their gluten index values were high (86-100). The wet gluten con tents of Chinese wheat samples were higher (31. 6% - 37. 2 % ), but the gluten index values were low (12-84).
