The use of distilled water and different concentrations of sodium glutamate solution for soaking fresh leaves of tea, study effect of soaking disposal on γ-aminobutyric acid in tea.The results showed that soaking in a certain period of time(0h—15h), γ-aminobutyric acid concentration and time was positively correlated, the use of sodium glutamate soaking disposal, the concentration of 1.5% was appropriate.
