Objective:To optimize the resveratrol from polygonum cuspidatum by Enzyme-assisted extraction. Method After the preliminary tests,the optimum condition of enzyme-assisted extraction has been obtained with the help of an experimental design.Result The best experimental conditions are extraction temperature 45℃, enzymatic pH value of 3.0,enzymatic time 8.13 h,the dosage of the enzyme is 29.7%(w / w).Conclusion Enzyme-assisted extraction can elevated the yield of resveratrol from polygonum cuspidatum.
