In this paper,antioxidative effect of nine edible spices(eugenol,cinnamaldehyde,thymol,vanillin,anethole, salicylaldehyde,citral,benzaldehyde,and anisaldehyde)on peanut oil was studied.Results showed that eugenol,thymol, anisaldehyde,and citral had obvious antioxidant effect on peanut oil and the best antioxidant effect was obtained with 0.06%, 0.06%,0.02%,0.04% in peanut oil respectively.The order of antioxidant effect is eugenol>thymol>anisaldehyde>citral.
