The polysaccharides of Asparagus officinalis were extracted in hot water, then isolated by ethanol. The protein in polysaccharides was removed by Sevage way and the pigment by H2O2. The monosaccharide composition was determined by HPCE, The composition of polysaccharides from Asparagus officinalis is Xyl, Fru, Rha, Ara, Gal. Phenol-sulfuric methods were used for the detection of the content of polysaccharide. The content of polysaccharide is 79.14%.
