流行病学调查显示,饮食结构的合理与否,和肿瘤、心血管疾病、肝病等一系列慢性疾病的发生率密切相关。体内外大量研究证实,从植物饮食中摄入的黄酮类化合物在预防、治疗上述慢性疾病中发挥了十分重要的作用。人类栽培和食用豆类荚果已经有几千年的历史,在世界上许多地区,豆类及其制品至今具有广泛的消费群体。许多有关豆类荚果的研究已广泛开展,但以前研究主要注重其中的蛋白质及膳食纤维对人类的贡献,而对其他成分的研究相对较少。自大豆中含有的异黄酮经广泛的药理研究证明具有防动脉粥样硬化,抗肿瘤,抗骨质疏松等多种作用以来,许多豆类中活性成分的分离以及研究已经深入开展,特别是其中含有的膳食黄酮类化合物可以作为体内天然抗氧化物质的来源而备受重视。
