The extracting of the Flavonoid Compounds from Mulberry leaves were studies by alcohol-water system extracting, microwave and ultrasonic wave were studied . The optimum technical conditions were obtained by the orthogonal design test, The results showed that the optimum extracting condition is 60%alcohol-water, volumn 1:30 .Ultrasonic treatment lasts for 35 minutes at 40℃ and heating extracting one hour.
