Extraction method, extraction conditions and anti-oxidative ability were investigated for the red pigment from the fruit of Parthenocissus tricuspichate Plach. The results indicated that water extraction is the best, and the optimal conditions are 50 ℃, 2 h, ratio 1∶4 of solid to liquid, and 3% soda as a solvent. The anti-oxidative ability of the red pigment of Parthenocissus tricuspichate Plach. is approximately 53% to DPPH.
