Coix lachryma jobi has highly nutritional and tonic functions. It may be used either as food or as drugs. In this paper, a manufacture method for preparing coix lachryma jobi seed beverage was presented. It was found that the content of essential amino acids in the germinated coix lachryma jobi seed (GCLS) was dramatically increased. The beverage prepaned with GCLS has high nutritional value.
