The mechanism of improving solubility and aromaticityof the product and heat efticiency of the process by foam spray drying in milk powder production are described from the point of view of the effect of foam on heat ard mass transfer and the selective diffusion theory,The analytical results of the products from the foam spray drying and the normal one in a laboratorial dryer are obtained for comparison.
