The mutagenicity of ten Chinese traditional processed food samples which include heated, salted and smoked fish, mutton, pork,beef and poultry was studied using the Ames Salmonella typhimurium test. The samples were extracted with ethyl ether and/or methyl alcohol. The extracts were passed through a XAD-2 column and examined for their mutagenicity in Ames test, all Of the samples examined, there were 7 samples showed mutagenicity.
