Analysis of the chemical components of 347 samples of sesame from Hubei Province showed that the significantly negative correlation between the chemical properties of protein and oil, oleic acid and lenoleie acid in the seeds was closely related to the bio-synthetie path.The protein and oil contents in the seeds were greatly influenced by the environmental conditions, capsule-set position and the coat colour of the seed.
