Chinese Actinidia chinensis Planch (Chinese gooseberry or Kiwifruit) is a kind of wild fruit originally growing in China. A model system simulated the stomach conditions (pH 3.13-3.28, 37℃) was used to study the blocking effect of the Chinese gooseberry juice on the morpholine nitrosation. When 2.0 mM NaNO2 and 2.0 mM morpholine reaction systems were incubated at 37℃ for 0.5, 1.0 and 2.0 hours, Chinese gooseberry juice gave 98.54%, 96.43% and 97.99% blocking respectively, the lemon juice gave 84.55%, 34.79%...
