Jinhua Ham, one of the traditional and special products of China, is well known both at home and abroad. But the ham-production cycle is too long (about 240-300 days) to meet the needs of market demand. What is the important role of microbial activity in ham-production and how can we shorten the ham-production cycle? These are the aims of the present work.
