白檀果肉红色素含量测定及基本理化性质的初步研究
Content Mensuration of Red Pigment in Flesh of Symplocos paniculata(Thunb.) Miq. and Elementary Study on It’s Basic Physical and Chemical Properties
【摘要】 本文优选了白檀果肉红色素的提取溶剂、测定该色素的含量,并对该色素的基本理化性质进行了初步研究,结果表明:1.5mol/LHCl-50%乙醇(V/V=15:85)是其最佳提取溶剂.色素含量为604.48mg/100g.该色素为水醇兼溶花色苷类色素,在酸性条件下稳定且色泽鲜艳.
【Abstract】 In this paper the optimum extraction solvent of the red pigment in flesh of S. paniculata is put forward, the pigment’s content is determined and some overall study on the pigment’s basic physical and chemical properties is carried out. According to the result the optimum extraction solvent is 1.5mol/LHCl-50%ethanol(V/V=15:85)and the content is 604.48mg/100g. The red pigment is water-soluble and alcohol-soluble anothocyanins. The pigment remain stable in acid solution with bright color.
