壳聚糖在食醋澄清中的应用研究
Study on the application of chitosan in vinegar clarification
【摘要】 试验证明加入壳聚糖于食醋中可以加速其澄清速度,提高澄清效果。加入量控制在0.010%￣0.015%时效果较好。
【Abstract】 It was indicated that the addition of chitosan in vinegar would accelerate the speed of clarification and improve the quality.Good effects were achieved when the content of chitosan was in the range of 0.010%~0.015%.
