【Abstract】 Expansion characteristic is the most important characteristic of popcorn. The key of expansion popcorn is the formation of grain internal high pressure. The compact structure of the pericarp and endosperm is an important guarantee for the formation of grain internal high pressure. In recent years, the researches on popcorn popping mechanism focused primarily on the structure characters of the grain, the influence of external and genetic factors.
