新疆棕色林蚁主要营养成分的测定与分析

【摘要】 对新疆可食用棕色林蚁主要营养成分进行测定。使用常压干燥法与灼烧法测其水分与灰分;微量凯氏定氮法测定蛋白质含量;使用索氏提取法测定脂肪含量;气相色谱法测定脂肪酸百分含量;采用高效液相色谱法测定蛋白质中18种氨基酸成分与含量。新疆棕色林蚁的蛋白质、必需氨基酸、亚油酸含量较高,必需氨基酸种类齐全,脂肪含量较低。新疆棕色林蚁主要营养成分丰富,其综合应用的开发前景十分广阔。

【Abstract】 To determine the main nutritional ingredients of Formica rufa L.in Xinjiang.Protein was assayed by Kjeldah method for nitrogen determination;moisture and ash contents were detected by ordinary pressure drying and burning-off methods;fat was determined by Suoshi extraction method;percent content of fatty acid was determined by vapor-phase chromatography;content of 18 amino acids in protein were determined by high pressurized liquor chromatography.The contents of protein and essential amino acids(linoleic acid)are rich in Xinjiang Formica rufa L.while the content of fat is lower.Formica rufa L.of Xinjiang is eutrophy and its combinational application will be widely exploited.
