高效液相色谱法测定肉制品中食用合成色素的含量

【摘要】 为建立一种简便并可同时测定肉制品中柠檬黄、苋菜红、胭脂红和日落黄的方法,肉制品经脱脂、乙醇+氨水(v/v)=70+30超声波振荡提取,过滤,采用HPLC系统以20mmol/L乙酸铵和甲醇梯度洗脱,二极管阵列检测器可变波长下检测,外标法峰面积定量。结果表明,4种食用合成色素回收率为91.5%~99.3%,相对标准偏差<1.5%。

【Abstract】 To establish a simple and simultaneous method for determination of lemon yellow, amaranth, carmine and sunset yellow in meat products, meat products was defatted, extracted with ethanol﹕ammonia(70∶30)by ultrasonic, filtrated, the separation was achieved by high performance liquid chromatography with 20 mmol/L NH4Ac-methanol as mobile phase and detected at alterable wavelength through a DAD. Results showed that the average recoveries ranged from 91.5 %-99.3 %, the relative standard deviation was less than 1.5 %.
