化学结合物理技术在果蔬贮藏中的研究与应用
【摘要】 国内外在果蔬保鲜领域采用的保鲜手段主要有物理和化学两大类,每一类又衍生出很多新技术。本文主要针对以下物理及化学结合技术在果蔬贮藏中的研究与应用进行介绍:低温冷藏复合保鲜技术,热处理复合保鲜技术,辐照预处理结合保鲜技术,电场和其他技术复合应用,超声波结合处理保鲜技术,MAP包装复合保鲜技术等。
【Abstract】 Fresh-keeping method that used in fruits and vegetables storage mainly has two kinds: physical and chemical,each kind has enlarged many new technologies.This paper discussed the study and applications of the combination of physical and chemical fresh-keeping methods in fruits and vegetables storage: low temperature storage combination fresh-keeping technology,heat treatment combination fresh-keeping technology,radiation treatment combination fresh-keeping technology,electrostatic field combination fresh-keeping technology,supersound combination fresh-keeping technology,MAP combination fresh-keeping technology,etc.
