【Abstract】 High-voltage pulsed electric field (PEF) is a promising technology in food processing, such as pasteurization, enhanced compression and extraction etc., because of its special influence mechanism. In this paper, researches which studied the influence of PEF on food in recent 10 years were reviewed and divided into four groups. This paper concluded the difficulties in the design of PEF systems and discussed the prospect of PEF in food industry.更多还原
