全糖粉生产原理与关键技术
The principle and key technology of producing total sugar powder
【摘要】 用DE值97%的淀粉水解液经过浓缩、冷却、部分结晶,形成具有可泵性的含有糖微晶体的糖浆。采用喷雾结晶技术,得到含有糖微晶体以及可结晶糖溶液的颗粒团。这种颗粒团进一步经老化、干燥后,成为颗粒状结晶体,即全糖粉。这种产品是一种含糖微晶颗粒团的球形颗粒,具有流动性好、不吸湿和速溶于水的特点,而且价格低廉,是蔗糖的一种理想替代品。
【Abstract】 97% DE starch hydrolyzates are subjected to concentration, cooling and partial crystallization to form a pumpable massecuite composed of microcrystals. The granular aggregates containing sugar microcrystals and crystallizable syrup are produced by spray-crystallization process. The aggregates are aged and dried to form sugar crystals, which is called total sugar powders. The products containing sugar microcrystals are generally spherical granules with the characters of free-flowing, non-absorption of moisture and rapid dissolution in water. It’s a desirable alternative to sugar because of its low cost.
