青花菜气调包装材料的选择

【摘要】 采用动态平衡理论,研究在气调包装20℃、4℃贮藏温度条件下,随着包装袋内O2,CO2气体浓度或分压的变化,青花菜呼吸速率RO2,RCO2与所需包装材料的透气率PO2,PCO2的相互关系。得出在不同温度下,所需包装材料的PO2,PCO2、透气比β值随包装袋内初始O2,CO2气体分压的变化曲线及理论公式,为气调包装材料的选择提供了理论依据,并通过透气性试验验证普通PE塑料薄膜不能完全满足气调包装材料的透气性要求。

【Abstract】 Based on the dynamic equilibrium theory of MAP, the relationships between the predicted permeability parameters PO2,PCO2 of polymeric films needed and the respiration rates RO2,RCO2 of broccoli were studied with the dynamic changes of O2、CO2 concentration within packages at 20 ℃,4 ℃, respectively. The changes of the permeability parameters PO2,PCO2 and their ratios β of polymeric films with the initial O2,CO2 partial pressure within packages were obtained and the functions described the changes were established, which is the theoretic basis for the material selection of MAP. The results of permeability tests indicated that the common PE polymeric film couldn’t satisfy the permeability demands of MAP completely.
