【Abstract】 The principle,constituents and history of electronic nose were introduced in this paper.The applications of electronic nose in dairy industry were described, focus on the maturity prediction and the shelf-life prediction of dairy products,such as the analysis of volatiles in dairy products,the classification of microorganisms,cheese and the geographical origin.The futures application of electronic nose in dairy industry were prospected.更多还原
