牛乳中未变性乳清蛋白的快速检测方法研究
Study on Fast Detection Method of Undenatured Whey Protein in Milk
【摘要】 采用微滤法结合双缩脲比色法测定牛乳中未变性乳清蛋白含量,并测定该方法的准确度,精密度及回收率。标准曲线回归方程:y=0.0146x+0.0093,R2=0.9955,检测精密度为1.34%-2.12%,回收率为96.16%-109.15%,平均101.63%。本研究表明用双缩脲法快速测定牛乳中的未变性乳清蛋白操作简便,准确快速,可用于大批量样品的检测。
【Abstract】 The undenatured whey protein was determined by the biuret’s method, which was combined with microfiltration. The veracity, precision and the rate of recycle were also determined. Regress equation of the standard carve: y=0.0146x+0.0093, R2=0.9955,the precision was 1.34%-2.12%, the rate of recycle was 96.16% to 109.15%, average 101.63%. The research showed that using biuret’s method to determine the undenatured whey protein content in milk was easy to be operated, moreover it was rapid and accurate, and so it can be used to detect large quantities of sample.
