双酶法水解黑豆豆渣制备可溶性蛋白

【摘要】 研究了不同蛋白酶水解黑豆豆渣,制备可溶性蛋白的工艺。结果表明,先用木瓜蛋白酶,在温度50℃,pH值为6.5的条件下作用3h,再用碱性蛋白酶,在pH值为9.0的条件下作用3h,黑豆豆渣的蛋白溶出率可以达到68.43%,氨基酸态氮含量控制在2.17%,溶解度为98.25%。

【Abstract】 The technological process of different proteinases hydrolysis preparation of soluble protein from black-soybean dregs was studied.When the black-soybean dregs were hydrolyzed by papain in the condition of pH6.5?50 ℃ for 3 hours,and then,hydrolyzed continuously by protease proteinases in the condition of pH9.0 for 3 hours,the extraction rate of soluble protein was up to 68.43%.The amount of ammonia nitrogen was 2.17% and the degree of solubility was 98.25% in this condition.
