植酸酶的酶学性质研究

【摘要】 以德国巴斯夫植酸酶为对象,研究了pH、温度以及热处理对其活性的影响。实验显示:该植酸酶在pH4.5~6的范围内均有80%以上的酶活性,最适pH为5.5;在温度30~50℃之间具有5 000 U/g以上的酶活性,最适温度为40℃;在80℃热处理20 min可保持90%以上的酶活,在90℃热处理20 min仅剩51.04%酶活。结果表明:pH、温度、热处理对植酸酶均有一定影响,饲料中添加植酸酶应该考虑这些因素。

【Abstract】 Phytase from BASF was chosen as experimental material,its optimal pH,optimal temperature and thermal stability were studied respectively.In this trial,phytase had over 80% of the enzyme activity at pH 4.5~6,the optimal pH was 5.5.It had over 5000 U/g of the enzyme activity at the temperature of 30 ~50 ℃,the optimal temperature was 40 ℃.It could keep more than 90% of the enzyme activity when being subjected to 80 ℃ for 20 minutes.whereas the enzyme activity decreased to 51.04% when being subjected to 90 ℃ for 20 minutes.The results showed that pH,temperature and thermal stability should be considered when adding phytase to animal feed.
