鲜切苹果的呼吸强度及乙烯生成量变化的研究
A Study on Changes in Respiration Rate and Ethylene Production of Fresh-cut Apple
【摘要】 以鲜切苹果为实验材料,研究了切割伤害诱导呼吸强度、乙烯生成量、酶活性以及酶促褐变的发生及其生理生化变化.结果表明,苹果切割后乙烯的生成量急剧增加,达到高峰后逐渐下降,且20℃贮藏条件下变化明显.不同温度条件下的鲜切苹果的呼吸强度逐渐增大,20℃下,呼吸强度的增幅较大.这种伤呼吸代谢活性的增强,将引起呼吸底物可溶性固形物快速消耗,使苹果品质明显降低.切割引起多酚氢化酶PPO活性明显升高,尤其是20℃处理组上升显著,并导致反映外观颜色的L*值下降,果实外观颜色变暗.实验结果认为,切割会诱发苹果产生剧烈的生理和生化反应,而温度对其反应速度影响显著,保持适宜的低温对于保持鲜切苹果的品质尤为重要.
【Abstract】 The physio-biochemical changes in respiration rate,ethylene production,polyphenol oxidase(PPO) and enzymatic browning of fresh-cut apple(Malus pumila Mill) induced by wounding were investigated.It indicated that ethylene production increased sharply to reach peak after cutting and then decreased gradually,especially at 20℃.Respiration rate was also induced to increase and caused decrease in soluble solid content.The wounding also induced the increase of PPO activity and resulted in decrease of L* value due to browning surface of freshcut apple.It suggested that wounding induced the occurrence of physio-biochemical reaction markedly and effect of temperature on the reaction was the most significant.It was important to maintain constant low temperature to keep better quality of fresh-cut apple.
