水媒法提取大豆异黄酮的工艺优化研究

【摘要】 以水为主要溶媒,提取脱脂大豆粉中的大豆异黄酮。采用响应曲面法(Response SurfaceMethodology,RSM)对影响大豆异黄酮提取的内在关键因素pH,提取时间和提取温度的最佳水平范围做了研究与探讨,通过对二次多项回归方程求解得知,在自变量分别为pH 8.74,提取时间2 h,提取温度70℃时,脱脂大豆粉中异黄酮提取率可达到最大。

【Abstract】 Soybean isoflavones were extracted by water from defatted soybean flour.A response surface methodology(RSM) was used to optimize the critical internal factors,and to find out the optimal concentration levels and the relationships between these factors.A three-level and three-factor(pH,time and temperature) Box-Behnken design was employed.By solving the quadratic regression model equation using appropriate statistic methods,the optimal conditions for obtaining more than 70.24% isoflavones extraction efficiency was calculated as pH 8.74,2 hours and 70℃.The extraction of soybean isoflavones with water from defatted soybean flour was studied.
