小米油脂成分研究
Study on components of millet oil
【摘要】 对小米粗脂肪含量以及油脂皂化值、不皂化物含量、颜色等特性进行了测定,粗脂肪含量为1.55%~4.91%(干基),油脂皂化值为192~197 mgKOH/g,不皂化物含量为1.97%~3.98%,颜色为罗维朋黄值70、红值4.0~12.0。同时还测定了6种主要的脂肪酸含量,其中不饱和脂肪酸为82.02%~90.39%,分离鉴定了不皂化物中的6种甾醇。
【Abstract】 The content of millet’s crude fat and millet oil’s related index were studied,such as saponification value,unsaponible matter content,colour,composition of fatty acid and the sterols.The results showed that the content of millet’s crude fat was 1.55%~4.91%,the saponification value was 192~197 mgKOH/g,the content of unsaponifiable matter was 1.97%~3.98%,the lovibond RYB colour was 70(Y) and 4.0~12.0(R),the total content of unsaturated fatty acid is 82.02%~90.39%,and 6 kinds of sterol were identified.
