【摘要】 为使我国水产品产运销质量管理体系趋于完善,更好地与国际接轨,介绍了美国、欧盟、挪威和日本的水产品安全保障体系,概括了我国目前水产品安全存在的一些问题,如监管体系的薄弱、饲养环境内外源污染的问题等。并针对水产品中的各种危害来源及控制方法做了分析论述。最后就欧盟着力推广的水产品可追溯体系(Tracefish)以及近年来预报微生物学在水产品生产上的应用做了相关介绍。更多还原

【Abstract】 In order to improve the quality management system of aquatic products in China, this article introduced that the safety assurance systems of aquatic products in the developed countries and districts, such as the United States, European Union(EU), Norway and Japan. Also the problems existing in China were summarized, for example, weakness in the monitoring system and pollution of breeding environment. Detailed discussion was made on the sources of hazards and responding control methods. Finally, tracefish, part of an EU project, was discussed as well as the application of predictive microbiology in the production of aquatic foods.更多还原
