葡萄酒苹果酸—乳酸发酵HPLC分析方法的研究
Study on HPLC method for malic-lactic acid fermentation in wine
【摘要】 采用HPLC法对葡萄酒酿造过程中的苹果酸、乳酸进行测定。色谱条件为:色谱柱SUPELCOSILTMLC-8(25cm×2.6mm;5μm)柱,流动相0.1%H3PO4,流速0.8mL/min,紫外检测波长214nm,检测器UV214nm×0.1AUFS。测定结果表明:标准曲线在0.02mg/mL~0.8mg/mL时线性良好,回收率为96.7%,相对标准误差为0.13%。
【Abstract】 Malic acid and lactic acid in the brewing of wine were determined by HPLC method.The conditions of chromatography were:SUPELCOSILTMLC-8(25 cm × 2.6 mm;5 μm)chromatography column,mobile phase 0.1%H3PO4,flow rate 0.8 ml/min,detection wavelength 214 nm,and detector UV 14 nm × 0.1 AUFS.The results showed that:the standard curve had good linearity within the range of 0.02-0.8 mg/ml.The recycling rate was 96.7% and the relative standard deviation was 0.13%.
