黑龙江鲶形目鱼类的肌肉营养组成分析
THE NUTRITIONAL COMPOSITION OF THE MUSCLES OF SILURIFORMES FISHES IN THE RIVER SYSTEM OF HEILOMN JIANG
【摘要】 目的:分析测定鲶、六须鲶、黄颡、乌苏里拟鲿的肌肉主要营养成分,对它们的营养价值进行综合评价。方法:采用常规的生化分析方法。结果:鲶、六须鲶、黄颡、乌苏里拟鲿四种鱼肌肉中粗蛋白含量为67.11%~82.11%;粗脂肪含量为8.91%~23.74%;灰分含量为4.95%~6.24%;18种氨基酸总量为52.54%~73.52%,其中8种人体必需氨基酸总含量为22.04%~30.37%,4种呈味氨基酸13.23%~29.40%。结论:这四种鲶形目鱼类肌肉中蛋白质含量较高,所含氨基酸种类齐全,必需氨基酸与鲜味氨基酸含量较高,是营养价值与经济价值都较高的优质鱼类。
【Abstract】 Objective:The nutritional composition of the muscles of Siluriformes fishes including Silurus asotus, Silurus soldatovi, Pelteobagrus fulvidraco, Pseudobagrus ussuriensis was analyzed. Method:Conventional and biochemical analytical methods were used. Results: The content of crude protein,lipid,ash was 67.11%-82.11%,8.90%-23.74% and 4.95%-6.24%, respectively. The total content of amino acids was 52.54%-73.52%, eight essential amino acids 22.04%-30.37%,four delicious amino acids 13.23%-29.40%. Conclusion: The four kinds of Siluriformes fishes belong to super cultured ones involved in high nutritional and economic value and worth to explore for food.
