【摘要】 应用植物蛋白酶和动物蛋白酶来处理酶解鲨鱼皮,通过现代生物化学方法分离制备鲨鱼胶原蛋白肽,并对其组成成分进行分析,测定了它们的粗蛋白、粗脂肪、灰分、氨基酸及Cu、Zn、Fe、Ca、Na、K、Pb等金属元素的含量.应用MALD I-TOF分析两种胶原蛋白肽分子量的分布范围.结果表明,植物蛋白酶酶解方法研制的胶原蛋白肽分子量分布范围在2~3 ku区间,而用动物蛋白酶酶解方法研制的胶原蛋白肽分子量分布范围在2~7 ku区间.更多还原

【Abstract】 Two kinds of sharkskin collagen products(S1 and S2) were prepared by the methods of hydrolysis with proteinase from plant and animal tissue,respectively.The nutritive compositions of these two products were analyzed.The contents of protein,lipid,ash,amino-acids and the metallic elements such as Cu,Zn,Fe,Ca,Na,K,Pb were mensurated and compared.The ranges of the molecular weights of S1 and S2 peptides were determined by the method of MALDI-TOF.The results showed that the molecular weight of S1 was between 2 ku and 3 ku and that of S2 was between 2 ku and 7 ku.更多还原
